The FAO database provides these documents for nearly each country around the worldand data are available for the years between 1961 and 2011.These food balance sheets detail data concerning domestic supply (including information on production, imports, stock variation and exports) and domestic utilization (including information on how products available are consumed). Within this second category, we focused on « Food » subcategory, which specifies how much foodstuffs are dedicated to the human consumption. This subcategory is estimated on the basis of an indicator named « food available for human consumption » and calculated by the difference between available commodity supplies and non food uses. What period is covered by the study ? This work is based on data from the years 2000 et 2011, in order to compare data at differentperiods and identify potential evolutions on a specific country. What is the geographical area ? The European borders are not fixed and they evolve according to institutions and actors. We haveso decided to offer a wider definition of the European continent, in order to be as precise as possible. First of all, the 28 members of the European Union (including Austria, Belgium, Bulgaria, Croatia, Cyprus, Czech Republic, Denmark, Estonia, Finland, France, Germany, Greece, Hungary, Ireland, Italy,Latvia, Lithuania, Luxembourg, Malta, Netherlands, Poland, Portugal, Romania, Slovakia, Slovenia,Spain, Sweden and the United Kingdom) have been integrated. Iceland, Montenegro, Serbia and Turkey have been equally added to the study as they arecandidates for joining the European Union. Given that they are geographically located in Europe, Albania, Belarus, Bosnia and Herzegovina,Moldova, Norway, Switzerland and Ukraine have been integrated too. The same choice was made forRussia because a large part of its territory is in Europe. Finally Armenia, Azerbaijan and Georgia have been added due to their cultural and geographicalproximity to Europe. Conversely Andorra, Macedonia and Liechtenstein have been excluded although they are Europeancountries, but there were no data about them on the FAO database. The food balance sheets are based on commodity categories classified by major food groups including milk, vegetables, cereals, fruits, starchy roots, sugar and sweeteners, pulses, tree nuts, oil crops, vegetable oils, stimulants, spices, alcoholic beverages, meat, eggs, and fish and seafood.
